It’s Raining Florets!

Nupur at One Hot Stove is hosting an event at her Blog. So I decided to submit two interesting recipes that caught my eye. The event requires us to use one ingredient in two different dishes. Hence, I decided to use cauliflower! I LOVE potatoes, but they aren’t the most carb friendly vegetable. With a few recipes under my belt, I have realized that cauliflower makes a pretty good alternative to potato.

My first recipe is inspired by Sandeepa at Bong Mom’s Cookbook. I took her very authentic Aloo Posto (Potato in Poppy Seed Gravy) and made a cauliflower version of that recipe.

Cauliflower in Poppy Seed Gravy

Soak 3 Tbs of poppy seeds in warm water
Heat some oil and add the cumin seeds when the oil is hot
Add the red and green chilies
Add the cauliflower florets, and add some turmeric power
In the meantime, grind the poppy seeds into a thick paste
Add the paste to the cauliflower and let the veggies cook!
Serve hot with roti or rice

My second recipe is an inspiration from Nancy at The Sensitive Pantry. Its cauliflower crust pizza! I was so excited to find this recipe that I did not think twice about the time consuming kitchen labor. Like the above recipe, I have added several variations, but the gluten free original version is here.


Cauliflower and Potato Crust Pizza


Boil 2 potatoes
Roast the cauliflower florets with olive oil, salt, and ground black pepper (follow the original baking instructions)
Once the veggies are cool, combine the potatoes, cauliflower, whole wheat flour, Parmesan cheese and the herbs (I used dried Italian herbs)
Place a parchment paper on the baking sheet and spread the dough
Bake the crust for 15 minutes at 450 F
For the toppings, I used tomato paste, broccoli, garlic, green peppers, onions, olives, tomatoes, cheese, and red pepper flakes
Bake for 15 – 20 minutes (I had to bake longer probably due to my ancient kitchen)

The verdict
Both dishes turned out tasty :)
The cauliflower posto was grainier than the potato posto
My pizza was not very crusty….definitely called for a fork and knife!
I want to try the pizza recipe with just one potato
